Protein Pancakes – Our weekend staple
We like it because is fast and easy to make. Protein Pancakes are also quite versatile, you can eat them plain or load them up with healthy berries topped with organic yogurt with a drizzle of honey, spiced pumpkin filling with a dash of cinnamon or get your healthy fats with Almond Butter. Modify the proportions as needed as long as you keep the ratio 1:1:1.
1 Cup Egg Whites
1 Cup Cottage Cheese
1 Cup Old fashioned Rolled Oats
Toss it all into your blender until its smooth. Sometimes I blend the Cottage Cheese and Egg whites first then add the Rolled Oats. Heat your pan and add use an oil that is suitable for cooking such as grape seed oil or coconut oil. If you want them a touch fluffier you can add a pinch of baking power and a pinch of baking soda.
